Mango Tofu Nori Wrap

Sweet, savory, and refreshingly crisp, this folded nori wrap is a simple, satisfying meal that feels fresh and vibrant. It balances creamy tofu with juicy mango and crunchy cucumber, all wrapped in umami-rich seaweed and sticky rice. Ingredients

• 1 sheet nori
• 1/3 cup cooked sticky rice or sushi rice
• 1/4 ripe mango, thinly sliced
• 1/4 cucumber, julienned
• 2 slices firm tofu, seared or baked
• Optional: splash of soy sauce or coconut aminos
• Optional toppings: sesame seeds, avocado, shredded lettuce, microgreens

Instructions

• Place the nori sheet on a flat surface, shiny side down
• Cut a vertical slit from the bottom edge to the center of the sheet
• Mentally divide the sheet into four quadrants
• Bottom left: sticky rice, pressed flat
• Top left: sliced mango
• Top right: cucumber strips
• Bottom right: tofu slices
• Fold the bottom left up over the top left
• Fold that over to the top right
• Then fold down to the bottom right, forming a compact square
• Press gently and let rest for 2 to 3 minutes to soften and seal
• Serve immediately or wrap tightly for later
